The practical convention is modest clothing in public: shoulders covered and hems below the knee, loose rather than tight. On the dhow and in the water, swimwear is completely normal and nobody will comment. A light scarf is useful — not because it is required, but because it doubles as sun cover on an exposed deck.

Humpback and spinner dolphins work these waters year-round and most cruises encounter them, often close to the boat, but they are wild animals in a large fjord system. Treat a sighting as the likely bonus rather than the product. If dolphins are the whole reason for your trip, that is a reason to pick a longer cruise, which simply spends more hours where they are.
